What We Love: Vitamix

That Working Girl I would not consider myself an unhealthy eater (besides my undying love for pasta, pizza, cheese and all things delicious). I have always been a huge fan of fruits and veggies, and when I cook and eat at home, it’s usually pretty healthy. But even with a conscious effort to make healthy recipes, I always feel like I’m missing out on certain nutrients. However, now that I have a Vitamix, I’m getting more of my recommended daily nutrition, and I feel healthier than ever! I realize it’s a bit costly, but it’s absolutely worth it – think of a Vitamix as an investment. Here are my two favorite Vitamix recipes that kick-start my day and energize my night:

Green Smoothie I have a green smoothie every day when I wake up. Immediately after drinking this surprisingly delicious, yet Grinchy-green colored smoothie, I feel so cleansed and fresh on the inside. It’s a great way to start your day and to get a ton of nutrients. Here’s the recipe – just blend the following ingredients (which I found on Pinterest) on the smoothie setting (takes about 30-45 seconds):

  • 1.5 cups of Almond milk
  • ½ of an avocado
  • ½ of a cucumber
  • 1 handful of spinach
  • ¾ cup of pineapple (I use 1 cup to make my smoothie a bit sweeter)
  • Juice from a lemon
  • A dash of cinnamon
  • 1 cup of ice  

Dr. Oz’s Belly Blasting Soup I’m actually not much of a soup person (unless served with a grilled cheese), but this recipe is delicious! It’s filling as is, but if you want to make this a full meal, add in a piece of lean chicken and a salad. This recipe is a bit spicy (which I love!), but if you’re not into the heat, cut down on the chili powder. As per Dr. Oz, this recipe is a fat-burning (“belly blaster”) soup – heck yeah! And to boot, it’s gluten-free! Just throw the following ingredients into your Vitamix on the soup setting (this setting even heats the soup up for you - it’s all done in about 6 minutes!):

  • 1 can of chickpeas (15 oz)
  • 2 garlic cloves
  • 1 can of diced tomatoes (I use the kind with green chiles)
  • 2 cups of vegetable stock or chicken broth
  • 2 tbsp of chili powder
  • ¼ cup of lime juice
  • ½ cup of fresh cilantro (I’m not a cilantro fan, so I ignore this ingredient)

And there you have it! Two fantastic, yummy Vitamix recipes – one to start your day and one to finish it. Not to mention, they are both filled with nutrients and super healthy. Not convinced on the Vitamix yet? Maybe I should mention that it makes ice cream, too!
